Easy Baked Tilapia Recipe

Last time Scott used our cast iron skillet to make blackened fish, he left it for too long outside, started a fire and burned it up.  Sooo, I’ve had to improvise on our favorite blackened Tilapia dish.  The baked one is just as good.  This is what you do:

  1. I bought a package of frozen Tilapia fillets.  We’ve used fresh as well.  If it’s frozen, put the individually wrapped fillets in some warm water.  It will be defrosted in a matter of 10 minutes.
  2. Put the fish in a baking dish.
  3. Sprinkle the fish with blackening seasoning.  Zatarain’s makes some and then there’s this other kind that is purple and black with a fat guy and a chef’s hat on.  Sorry, I don’t know the brand but it comes in a box in the seasonings.  I sprinkle mine pretty heavily.
  4. Put two pats of butter on each end of each filet.
  5. Bake on 500 for 25-30 minutes.

And voila!  Seriously good, easy, super-tasty and quick (and mostly healthy) fish.

Now it’s seriously getting bad

OMG, I barely want to type this.  But my neighbor seriously fired his gun last night.  In his bedroom.  Out his window.  Did you read that right??  He actually used his gun.  Thank goodness he only has blanks and only left a hole in his screen.  His daughter has taken his gun.  Scott and his daughter and son-in-law were all over there tonight arguing with him about whether someone was out there.  At one point he even told his daughter not to come back but then they were able to smooth things over.  He still claims he can feel when people are near him although Scott walked up on him the other day and scared him when he turned around.  Scott found out he is taking at least four pills at night and they are thinking he seriously thinks he is seeing someone because he is hallucinating.  This is crazy though.  All I can say is I’m so happy someone took the gun away.

Blog Recommendation

I recently found The Lylah Blog.  My aging mind can’t recall how but I’m so glad I stumbled on it.  Lylah is interested in helping women in their walk with Christ and with their husbands and children.  I’ve enjoyed so many of her posts, both new and old.  She recently had a post where she gave away one of her books and I can’t wait to read it.  In exchange for the book and just because I think she’s worth recommending, go visit The Lylah Blog!

Two Missing Posts

So I tried using my WordPress iPhone app to type up two posts last night but when I click tap on the menu that says Local Drafts (2), nothing is in the list.  I’ve left a message with support and maybe you guys can read it.  In summary, it says my neighbor is still seeing his visitors, he got his gun but only has blanks and we’re beginning to believe the issue is related to the war he fought in.  The other was a long post complaining about how stressed I was yesterday.  Hoping today is better.

I heard this one on SYTYCD actually “Youth is wasted on the young.”  How true at times.

This one I thought of as I lay in bed not wanting to get up and exercise.  I don’t think it’s grammatically correct but oh well.  “To be different, do different.”  I was just thinking if I want to BE a healthier, more fit person, I’m going to have to DO something about it.

Emma and Lexi were pretending to call their boyfriend on cellphones in the car last night

Emma: You want to go on a date?

Lexi: Sure

Emma: That means we’re going to coffeeland.

I have *no* idea where she might have gotten that idea.

We have a blended family in our youth group.  The families involved have last names beginning with B, J and B.  We were trying to come up with nicknames for the family and J pipes up (without thinking ;): “Double BJ”.  Um, no.

We were talking about David last night at church and I was saying that a lot of times people concentrate on his infidelity with Bathsheba and I said, “David did more than just Bathsheba.”  Try saying that to a bunch of teenagers and not get a response.
